Asaro (Yam Casserole)Serves 4
1 medium white or yellow African yam (available at African food stores) Cut and peel yam (1/2 -1 inch thick). Place yam in a pot. Add water. Cover and boil for 20 minutes, or until done (fork should go cleanly through). Add other ingredients. Stir. It’s okay if yams break up as you stir, but mixture should not be mushy). Leave on low heat for 20 minutes. Serve hot. |
