Bidia

1 cup milk
9 oz. white cornmeal.
1 cup water

Heat the water in a pan. In a jug, mix half of cornmeal with the milk. Mix vigorously until it forms a smooth paste. Boil the water in a saucepan. Add the cornmeal-milk mixture, slowly and stir constantly. Add remaining cornmeal and allow to cook for 3-4 minutes. As you stir, the mixture will get heavier and begin to form a dough. Remove from pan and put in a bowl. Wet hands and shape mixture into a ball (wetting your hands prevents them from sticking to the bidia).

Serve with meat, fish or groundnut stew

(In West Africa, this main staple is made with pounded cassava, or yam and boiled water and is called Fufu)
