Dodo (Fried Plantain)

Serves 4

2 large ripe plantains
1-1/2 - 2 cups oil (vegetable or olive oil)

Slice plantains diagonally or cut into round shapes about ½ inch thick. Heat oil in pan. Drop each slice in hot oil. Turn plantains to brown on both sides. Remove plantains and place in dish. Pat excess oil.

Serve with stew and steamed rice, or jollof rice. Excellent as a snack or appetizer.
