Greens With Coconut Milk

1 lb. fresh collard greens (or spinach, turnip greens or kale), cleaned and chopped
OR use 10 oz. package, frozen collard greens, thawed
1 medium onion, peeled, chopped
3 large tomatoes, cubed
1 cup canned coconut milk
Pinch of salt

In a large pan, boil water over high heat. Add collard greens. Reduce heat to low. Simmer for 4-5 minutes. Add onion, tomatoes, coconut milk and salt. Stir well. Cook, uncovered, for 2 minutes.

Serve hot alone, or with rice or couscous.
