Groundnut (Peanut) Sauce

1/2 cup natural (fresh ground) peanut butter
2 medium tomatoes, chopped
1 medium onion, peeled an chopped
1 small eggplant, cut into bite-sized pieces
2 tbsp. vegetable oil
1/4 cup water

In a frying pan, heat oil over medium heat. Add onions and sauté until transparent. Add tomatoes and cook for 5 – 7 minutes. In a bowl, combine peanut butter and water. Stir to make a paste. Add to tomato-eggplant mixture. Stir. Reduce heat to medium-low and simmer, uncovered, until eggplant is tender (about 10 minutes).

Serve with rice, yam or plantains
