Skudahkharis (Lamb And Rice)
1 lb. boneless lamb, beef or chicken Cut lamb, or beef or chicken, into bite-sized pieces. Heat oil in Dutch over medium heat. Add onion, garlic and lamb. Cook, stirring constantly until meat is browned (5 – 10 minutes). Add tomatoes, cumin, cloves, cinnamon, tomato paste and water. Bring mixture to a boil over high heat. Add rice, salt and pepper. Stir. Reduce heat to low. Cover pot. Simmer for 30 minutes or until rice has absorbed water. Remove pot from heat. Let stand, covered, for 5 minutes. Serve in a large bowl. |
