Traditional Stew

Serves 4

2 lbs. meat (goat, beef, chicken, turkey) or fish
2 large red bell peppers
1 large onion
6 oz. tomato paste
1/2 tsp. each spices: chopped garlic, thyme, sage, rosemary, curry, white pepper, ginger, (and hot pepper, optional, to taste)
1/2 cup cooking oil (peanut oil is best, but any will do)
Pinch of sea salt
1 cup water

Cut meat into medium pieces. Brush with spices. Broil in its juices for 15 minutes (Do not broil fish if using fish). Add rest of ingredients. Cover and let simmer over medium heat for 20 minutes, stirring occasionally. Watch out for splashes!

Serve hot over rice or with fufu or other starch dumpling.
