Yam Balls

Serves 4
1 medium African yam (available at African food stores)
1 large chopped red pepper
1 medium onion
1/2 tsp. each thyme, curry and white pepper
3 large eggs
Medium can corned beef
2 cups cooking oil
1 tsp. salt
Flour

Cut and peel yam. Beat eggs until frothy. Boil in 2 cups of water until tender (20-30 minutes). Mash in a bowl and add corned beef and spices. Add half of eggs slowly, enough to still be able to mold the mixture into balls.

Pour oil in deep pan or fryer. Roll balls in flour. Drop into hot oil. Turn balls until golden brown. Remove carefully and place on grease sheet.

Perfect as an appetizer or snack.
